Fish, even though it's not my favorite food, is very easy to cook. If you don't know what to cook for dinner, it's really easy to defrost some fish in warm water for 10 minutes and cook it right up. Just add seasoning and bake, pan fry, grill, broil - the choice is yours! I used to use Tilapia quite often, but I learned recently that tilapia is one of the worst fish you can eat. Apparently it's a farmed fish that is not very nutritious and is, in fact, full of garbage or feces!
So, since we are no longer eating tilapia, I bought some Drum from Good Eggs Nola and had it delivered to my door. Good Eggs is definitely something I recommend if you are in one of their service areas. It's a cool concept and I'm so excited we have this in NOLA. They deliver to me in Metairie and I love that I am supporting local farmers and businesses while eating amazing local food.
I had never cooked drum before, but I learned that it is a very meaty and delicious white fish. Here's how I cooked it for dinner Saturday night.
seasoning of your choice*
olive oil or butter
Cover a baking pan with aluminum foil or parchment paper. Oil the fish on both sides and add seasonings liberally to the top of the fish. It should be covered in seasoning. Squeeze fresh lemon over everything. Dice some tomatoes and sprinkle them on the pan, drizzle olive oil over everything. Bake at 400 degrees for about 20 minutes. My fillets were thick so it took a full 20 minutes, but check it half way through.
*I used a seasoning blend from spicely organics. It was called grill & broil seasoning for fish and it contained a few seasonings such as paprika, rosemary, ground mustard, pepper, garlic, and onion.
This was DELICIOUS. Chad and I really enjoyed it and I am not a big fan of fish. I like that the fish was locally caught. The tomatoes were yummy, too. Next time I could add artichokes, onions, etc to add more veggies to the pan.
