Meatloaf doesn't sound appetizing to many people, but this recipe from Nom Nom Paleo will change all that.
I always double the recipe. It's that good. The recipe below is doubled, so it makes a good bit. I end up having to put some of the meatloaf into a cupcake or muffin tin and making a side batch of meatloaf muffins. :o)
Her recipe adds spinach but I haven't made it with spinach yet. I bet it would be yummy, though.
2 tablespoon unsalted butter (or coconut oil)
Finely chopped yellow onion (from 1 medium onion)
1/2 pound Cremini mushrooms, finely chopped
1 green bell pepper, small-dice
1/2 cup loosely packed fresh Italian parsley leaves
1 pound ground pork
1 pound ground beef
¼ cup coconut flour 1 medium garlic clove, minced
1 teaspoon kosher salt, plus more as needed
1 1/2 teaspoons freshly ground black pepper, plus more as needed
Sprinkle of cayenne, worchestire, fish sauce, sriracha
1/4 teaspoon freshly grated nutmeg
3 large eggs, lightly beaten
3-5 bacon slices
Tomato sauce, warmed, for serving (optional) or no-sugar added ketchup
Saute the onions, bell pepper, and mushrooms until soft. Mix with the remaining ingredients in a large bowl. Place in a non-greased loaf pan and layer bacon slices on top. Bake at 350 degrees for about an hour. If the bacon isn't crispy at the end, broil it for a few minutes. You will definitely want to pour off all the grease afterwards.
