Pumpkin Bread

This recipe for pumpkin bread is incredibly easy to make and turned out really delicious, especially with a heaping spoonful of whipped cream. I plan to make this again and again! It really satisfies a craving for pumpkin-spiced-anything. Oh, and no need to go out and buy "pumpkin spice" because you can make your own! Recipe is also below.

Gluten Free Pumpkin Bread Recipe

Serves: 6-8

INGREDIENTS:

1 cup almond flour
1/4 cup coconut flour
1/2 tsp sea salt
1/2 tsp baking soda
1 tsp cinnamon
1/2 tsp pumpkin pie spice (recipe below)
3/4 cup pumpkin
1/4 cup maple syrup
1/4 cup coconut oil
3 large eggs

DIRECTIONS:

Preheat oven to 325 degrees F
Combine all wet ingredients in a bowl
Combine all dry ingredients in another bowl
Mix both bowls together until well incorporated
Pour into greased loaf pan and bake for 45-60 minutes.

PUMPKIN PIE SPICE

I put this in my coffee and hot tea with a little maple syrup or honey and some coconut milk or half and half and it tastes amazing! This makes more spice mixture than you'll need for the above recipe, so use it in your next latte instead of that processed fake syrup at Starbucks and thank me later. :-)

1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/4 teaspoon allspice
